Colombian cooking Because of the high quality and authenticity of its products, Cali is after Bogotá Colombia’s second best city for the culinary inclined. Its pièce de résistance is the Sancocho, a soup with chicken or fish. Other favourites are the so-called empanades, mildly hot little packages with rice, meat or vegetables and the similar but less spicy Tamalas. You can also taste delicious tropical fruits like the ‘lulo’, the mango, the watermelon, the passion fruit, the ‘borojo’, the papaya and the maracuya.
